Carrot and Lentil Soup Recipe

It's been a long time since I've posted a recipe on A Typical English Home but I really fancied sharing how to make my favorite soup this week. Perhaps it's the cold, snowy weather and the need for comfort food! And the fact I need something hot to warm me up now our boiler has packed in and we have no central heating.

You will need:

500g to 600g carrots (grated)
1 medium sized onion (grated)
120g red lentils
1 litre vegetable stock
Peas (frozen)
Seasoning and spices

This recipe will serve up to four people, but generally I just make a batch up on Sunday night and it does me for a few weekday lunches. You can chuck in any vegetables you have lying around and it will taste great - it is a fab way to use up leftover veggies which might otherwise get thrown away. 

1) Grate your carrots and onion (I use my food processor to do this, much easier!)
2) Put in a pan with a litre of vegetable of stock, the lentils and peas.Add seasoning and spices, to taste. Bring to the boil, cover and leave to simmer for 15 minutes.
3) I like it chunky but you can use a blender if you prefer smooth soup. Serve with crusty bread.
